Patriotic Poke Cake

MAKES 1 (9-INCH) ROUND DOUBLE-LAYER CAKE

There are so many holidays and special occasions to demonstrate your patriotic pride. Bake Patriotic Poke Cake to celebrate the “rockets’ red glare.” Celebrate someone you care about who has served our country in the military and bake a thank-you that is sure to mean more than words. Ignite pride in our country around the dessert table and celebrate the many blessings of freedom.

Nonstick cooking spray

1 (15.25- to 18-ounce) box white cake mix

Eggs, oil, and water as directed on the cake mix box

2 cups water

1 (3-ounce) box strawberry gelatin

1 (3-ounce) box berry blue gelatin

Easy Decorator’s Frosting

Preheat the oven to 350ºF. Spray two 9-inch round cake pans with nonstick cooking spray. Line the bottoms of the pans with parchment paper cut to fit and spray the parchment as well.

Prepare and bake the cake according to the package directions for a double-layer cake. Place the cakes on a wire rack to cool for 10 minutes.

Place 1 cup of the water in a 4-cup microwave-safe glass bowl. Microwave on High (100%) power for 2 to 3 minutes, or until the water comes to a boil. Stir the strawberry gelatin into the water until it has dissolved. Using a separate bowl, repeat with the berry blue gelatin.

Poke holes evenly over both of the baked cakes using the tines of a fork. Pour the strawberry gelatin over one cake layer and the berry blue gelatin over the other cake layer. Cover and refrigerate the cakes for 1 hour.

Remove the layer cakes from the refrigerator. Place a large plate over one of the layers and invert to remove the cake from the pan. Remove the parchment paper. Use another large plate to invert the layer back so that the side with the gelatin remains on top. Repeat the process with the second layer. Spread the top of one layer with a thin layer of Easy Decorator’s Frosting. Top with the second layer. Frost the top and sides with the remaining Easy Decorator’s Frosting. Refrigerate until ready to serve.

TIPS

Be sure to remove the parchment paper from the baked cakes before frosting.

Decorate the top of the cake with red and blue sprinkles, if desired.
