Easy to make, delicious, and different, these are a lifesaver when you do not have any other sweets in your pantry. Slices of sandwich bread are coated with butter and sugar, cut into rectangles, and browned in a hot oven until crusty.
Makes 12 “cookies”
Heat the oven to 400 degrees. Line a cookie sheet with aluminum foil and spread the sugar on it.
Coat each slice of bread with 1 tablespoon of the soft butter, using ½ tablespoon per side. Press both sides of the buttered bread into the sugar on the cookie sheet, adding a bit more sugar if needed to coat the bread well. Trim the crusts from the bread and cut each slice into 4 rectangles.
Arrange the pieces of bread on the cookie sheet, place in the hot oven, and bake for about 12 minutes, until brown and crusty.
Stack the cookies on a plate and serve with fruit or other desserts.
