Fennel, a uniquely flavored flowering plant species, also serves as a digestive aid that is both cooling and delicious. It is woefully underused in the modern kitchen, but you can change that with this simple, refreshing, and energizing drink. Fennel seeds should be green or greenish brown. If you have a jar sitting in your cupboard and the seeds have turned gray, they’re past their prime and flavor, and should be replaced.
2 cups Homemade Rice Milk or unsweetened store-bought rice milk
¼ cup fennel seeds, ground
¼ teaspoon ground cloves
1 tablespoon honey
1 In a blender, combine the milk, fennel seeds, cloves, and honey. Process until smooth, and let rest for 30 minutes.
2 Pour over a wire mesh strainer lined with cheesecloth or over a coffee filter set over a glass or jar. Serve.
