Vanilla Chia Smoothie

Chai tea is a refreshing blend loaded with warming spices. Cinnamon, ginger, cardamom, and cloves all lend their unique flavors to this iced concoction that will give you the burst of energy to make it through a long morning. Chia seeds thicken the smoothie and add a bit of helpful fiber and protein, providing lasting energy.

1 cup Homemade Rice Milk or unsweetened store-bought rice milk

2 black tea bags

1 teaspoon vanilla extract

1 cup ice

1 teaspoon honey

2 tablespoons chia seeds

½ teaspoon ground cinnamon

½ teaspoon ground ginger

¼ teaspoon ground cardamom

¼ teaspoon ground cloves

1 In a small pan, heat the rice milk to just steaming. Steep the tea bags for 5 minutes, then discard.

2 In a blender, combine the rice milk, vanilla, ice, honey, chia seeds, cinnamon, ginger, cardamom, and cloves. Process until smooth, and serve.

Substitution tip: To make this ahead, complete Step 1 and refrigerate the milk tea in an airtight container. When ready to make the smoothie, proceed as directed, reducing the ice to ½ cup and adding ¼ cup of water.
