This dessert in a glass tastes every bit as delicious as it sounds. Strawberries emerge in spring, just when we need them most. They serve as an excellent detoxifier and help support the kidneys, liver, and spleen. Loaded with as much vitamin C as oranges, strawberries make a welcome addition to a diet any time of year.
1 cup Homemade Rice Milk or unsweetened store-bought rice milk
1 cup strawberries, hulled
2 tablespoons cream cheese, at room temperature
½ teaspoon honey
1 teaspoon vanilla extract
3 to 5 ice cubes
In a blender, combine the rice milk, strawberries, cream cheese, honey, vanilla, and ice cubes. Process until smooth, and serve.
Substitution tip: Make your own cheesecake smoothie by substituting another favorite fruit for the strawberries. Blackberries, blueberries, and raspberries all work nicely in this treat.
