Green smoothies empower, especially when they have just enough natural sweetness and flavor to make you crave them. This smoothie succeeds, with a nutrient-packed blend of apple and cucumber—cooling and delicious.
½ cucumber, peeled and roughly chopped
½ green apple, roughly chopped
1 cup Homemade Rice Milk or unsweetened store-bought rice milk
2 cups spinach
3 ice cubes
In a blender, combine the cucumber, apple, milk, spinach, and ice. Process until smooth, and serve.
Substitution tip: A tart green apple is lovely in this smoothie, as it creates a subtle sweetness. However, if you prefer, other apples, such as Fuji, Red Delicious, or McIntosh, can be used. If you are using a thick-skinned apple, peel it first for a nicer texture in the finished smoothie.
