Spinach Salad with Orange Vinaigrette

This super-quick, refreshing salad presents itself with a touch of sweetness and a treasure trove of nutrients. Vitamins A, C, K, and fiber are just a few of its hidden health benefits. To ensure that the greens stay crispy, toss the salad with the vinaigrette right before serving.

Zest and juice of 1 mandarin orange

1 tablespoon extra-virgin olive oil

Freshly ground black pepper

6 ounces baby spinach

2 mandarin oranges, peeled, membranes removed

1 In a small bowl, whisk the orange zest, orange juice, and olive oil. Season with pepper.

2 In a medium bowl, toss the spinach and pieces of orange. Drizzle the dressing over the salad, and toss to coat. Serve.
