In this coleslaw, the red-cabbage variety (which is especially rich in antioxidants) pairs with a tart apple for a unique combination. Serve this salad alongside poultry, pork, or fish.
3 cups shredded red cabbage
½ cup shredded carrots
¼ cup finely chopped scallions
Juice of 2 lemons
1 tablespoon honey
1 tablespoon extra-virgin olive oil
1 large tart apple, peeled and finely diced
Freshly ground black pepper
In a large bowl, add the cabbage, carrots, scallions, lemon juice, honey, olive oil, and apple. Mix well and refrigerate for 30 minutes to chill. Toss with black pepper right before serving.
Ingredient tip: Cabbage is sold in both red and green varieties. For this recipe, you will need less than a full head of cabbage, so if your store sells halved and wrapped cabbage, you can purchase this to avoid waste. Alternatively, you can save time by buying preshredded cabbage.
