Sometimes the simplest flavorings are just enough to really set off a piece of fish. These humble halibut fillets stand out when baked in this lemon-and-garlic marinade, and topped with fresh herbs. For the most tender and noteworthy results, cook the fish until it just flakes.
¼ cup freshly squeezed lemon juice
2 tablespoons extra-virgin olive oil, divided
2 garlic cloves, minced
Freshly ground black pepper
1 pound halibut fillets, skin removed
Zest of 1 lemon
2 tablespoons chopped fresh cilantro
2 tablespoons chopped fresh parsley
1 Preheat the oven to 400°F.
2 In a medium bowl, mix the lemon juice, 1 tablespoon of olive oil, and garlic. Season with pepper. Add the halibut fillets, flipping them once or twice to coat. Refrigerate for 10 minutes to marinate.
3 Arrange the fillets on a baking sheet and brush with the marinade. Cook for 12 to 15 minutes, brushing with the marinade once about halfway through. Cook until the fish flakes with a fork. Discard the marinade, and serve the fish topped with lemon zest, cilantro, and parsley.
Cooking tip: Just 10 minutes in, the marinade will infuse the fish with plenty of flavor, but you can marinate the fish for up to 1 hour beforehand.
