Tropical Granita

SERVES 4 • PREP TIME: 5 MINUTES, PLUS 2 HOURS TO FREEZE

“Sunshine in a bowl” is a good description for this refreshing dessert. It takes just minutes to pull together before freezing, is perfect for a hot day, and can be endlessly tweaked to suit your tastes. Try this tropical blend and be instantly transported to the Caribbean.

1 cup fresh or frozen pineapple chunks

½ cup fresh or frozen mango chunks

2 cups orange juice

Juice of 1 lime

Fresh mint, for garnish

1 In a blender, combine the pineapple, mango, orange juice, and lime juice. Process until smooth, and transfer to a freezer-safe dish. Freeze for 2 hours.

2 Use a fork to break the mixture apart into smaller granular pieces. Serve garnished with pieces of torn mint leaves.

Cooking tip: If you freeze the granita too long, it will become solid. Let it sit out for about 20 minutes until it is breakable, and separate it into a few chunks, then pulse in a blender until its consistency resembles shaved ice.
