Here’s a simple spice blend that elevates grilled meats and fish, and adds complex layers to soups and stews. A good all-purpose mixture to always keep on hand.
1 tablespoon dried rosemary
1 tablespoon dried thyme
1 tablespoon dried basil
1 tablespoon dried parsley
1 teaspoon dried oregano
1 teaspoon dried tarragon
In a small bowl, mix the rosemary, thyme, basil, parsley, oregano, and tarragon. Transfer to an airtight container, and store in a cool, dark place for up to one month.
Cooking tip: Herbs de Provence can be rubbed on meats, poultry, and fish before cooking with a little oil to infuse flavor, or it can be added during cooking. It should always be cooked, however, as the raw spice blend can be overwhelming.
