Nearly everyone loves a ranch-style dressing, and this condiment can be especially hard to give up when dieting. And you don’t have to with this renal-friendly dressing that shines with the flavor of chives and parsley. Let the cream cheese sit on the counter for a bit before making the dressing to allow for easy whisking, or speed the process with an electric mixer or blender.
¼ cup cream cheese, at room temperature
¾ cup Homemade Rice Milk or unsweetened store-bought rice milk
1 garlic clove, minced
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh parsley
Freshly ground black pepper
In a small bowl, whisk the cream cheese with the rice milk. Add the garlic, chives, parsley, and pepper, mixing well. Use immediately, or store in an airtight container in the refrigerator for up to three days.
Substitution tip: This dressing is completely customizable to your tastes. Use oregano, thyme, rosemary, and other household herbs based on what you have available. It’s a great reason to grow a small herb garden on your windowsill or outside, so you can reap the health rewards of including fresh herbs in your everyday cooking.
