Quick Herb and Oil Marinade

MAKES ABOUT ¼ CUP [1 TEASPOON = 1 SERVING] • PREP TIME: 10 MINUTES / COOK TIME: 15 MINUTES

Immerse poultry, meat, or fish in this simple marinade, and then toss it on the grill for a flavorful main dish in minutes. Meat and poultry can marinate just 2 hours to as long as overnight, and fish benefit from 30 minutes to 2 hours.

¼ cup extra-virgin olive oil

1 tablespoon red or white wine vinegar

1 fresh rosemary sprig, leaves only, chopped

2 fresh thyme sprigs, leaves only, chopped

3 garlic cloves

Freshly ground black pepper

In a small bowl, mix the olive oil, vinegar, rosemary, thyme, garlic, and pepper until blended. Store in an airtight container, refrigerated, for up to three days.

Substitution tip: Apple cider vinegar can be used in place of wine vinegar. Substitute herbs based on your preferences. Cilantro and parsley are a good replacement for rosemary and thyme.
