CHOCOLATE GANACHE

This all-purpose spread doesn’t need much of an introduction. It is fast and flexible—it’s creamy, spreadable chocolate! I do offer this one note: I cannot take responsibility for any feuds which may arise over who gets to lick the bowl.

INGREDIENTS

1/2 cup non-dairy chocolate chips or other chopped non-dairy chocolate

1 tablespoon non-dairy margarine or coconut oil

2 tablespoons non-dairy milk of choice

    Makes 1/2 cup

DIRECTIONS

To make it in the microwave: Combine all of the ingredients in a microwave-safe bowl. Microwave on high power in 10-second increments, stirring between each one, until the chocolate is melted and you can incorporate the other ingredients. It’s important to stir even if it doesn’t look like it needs it—chocolate burns easily.

To make it on the stovetop: In a double boiler or a heatproof bowl suspended over a pot with about 2 inches of simmering water in it, over medium heat, combine all of the ingredients and stir constantly until smooth. Be mindful that there is space between the bowl and the water; you want the hot steam to do the melting.
