BERRY SAUCE

Simple, sweet, and saucy. Just the way it should be.

INGREDIENTS

    4 cups fresh assorted berries (chopped strawberries, blueberries, chopped blackberries, raspberries)

    1/4 to 1/3 cup evaporated cane sugar

    2 tablespoons water

    1/4 teaspoon fresh lemon juice

    Makes about 3/4 cup

DIRECTIONS

      In a large saucepan, combine the berries, 1/4 cup sugar, water, and lemon juice. Whisk well and then bring to a boil over medium heat, stirring often. Lower the heat to a simmer. The berries should begin to burst and it will become very saucy. You can use the back of a large spoon or a potato masher to break up any large chunks of berries. If you aren’t a fan of seeds, you can also push the sauce through a fine-mesh strainer to remove many of the seeds.

      Cook for an additional 3 to 5 minutes, until the sauce begins to thicken a bit. Taste for sweetness and add sugar, if necessary. Let the sauce cool before using.
