Roasted Carrot Smoothie

By roasting carrots in the oven at 350°F for 30 minutes, you bring out their sweetness by caramelizing the natural sugars. Try this technique with peppers, garlic, parsnips, and whatever else you’d like to experiment with. The unique flavors that roasting brings out can completely change the taste profile of your green smoothie.

Recipe Yields: 3–4 cups

2 cups mixed greens

3 roasted carrots, cooled

1 small apple of choice, peeled and cored

12 orange, peeled and seeded

1 tablespoon pumpkin seeds

2 cups water

  1. Combine all ingredients and blend on high until smooth.
  2. Add more liquid if necessary.
