Over the Top Smoothie

The tops of vegetables are often tossed away with the weekly trash. But did you know that many contain beneficial nutrients and are completely edible? Not only are they edible, but they are delicious. In addition to putting them in a smoothie, you can chop the top greens and add them to salads, soups, and even sauté them for a beautiful side dish.

Recipe Yields: 3–4 cups

1 cup watercress

12 beet plus greens, peeled and chopped

1 celery stalk, plus leaves

1 small carrot, plus top greens

4 Brazil nuts

2 cups green tea, cooled

  1. Combine all ingredients and blend on high until smooth.
  2. Add more liquid if necessary.
