Mojito Smoothie

Although you can certainly add the real thing to this smoothie, rum—and most alcohol—is considered a no-no in the Paleo community due to the high sugar content and toxicity caused to the liver. However, there are times when some people make exceptions and let their hair down. If you use the extract, note that imitation versions are filled with artificial ingredients. Use the natural varieties for a more complex flavor.

Recipe Yields: 3–4 cups

112 cups Bibb or Boston lettuce

12 cup fresh mint

4 limes, peeled and seeded

4 Medjool dates, pitted and seeded

2 cups water

2 teaspoons rum extract, optional

  1. Combine all ingredients and blend on high until smooth.
  2. Add more liquid if necessary.
