Beet That Sweet Tooth Smoothie

When you’re looking for a sweet treat, beets are vitamin- and nutrient-packed vegetables that offer up a sweet taste comparable to many fruits. This recipe is just one of the many greens-and-beet combinations that you’ll enjoy. Both the root (the deep reddish-purple bulb we think of as the beet) and the greens of this nutritious, delicious little veggie are edible and highly nutritious. Packed with calcium, potassium, and vitamins A and C, these powerful veggies are a healthy addition to any diet.

Recipe Yields: 3–4 cups

2 cups beet greens

1 beet, peeled and diced

1 cup frozen mixed berries

12 peeled and frozen banana

2 cups unsweetened almond milk

  1. Combine all ingredients and blend on high until smooth.
  2. Add more liquid if necessary.
