Key Lime Pie Smoothie

Good things come in small packages and this is definitely true of the key lime. The adorable citrus fruit packs a dynamic punch of flavor and vitamin C. You usually buy key limes in a netted bag, so if you have a lot left over, their strong acidic flavor and juicy nature lends itself well to a ceviche, which is a perfect summer Paleo meal.

Recipe Yields: 3–4 cups

2 cups iceberg lettuce

Zest and juice of 4 key limes

12 avocado, peeled and pitted

12 peeled and frozen banana

1 tablespoon raw honey

1 cup unsweetened almond milk

6 coconut water ice cubes

Almond meal, optional garnish

  1. Combine all ingredients except almond meal and blend on high until smooth.
  2. Add more liquid if necessary.
  3. Sprinkle a little almond meal on top if desired to give it a “pie crust” texture.
