Piña Colada Smoothie

Jamaican me crazy with this traditional island concoction! Ice cubes can water down a smoothie once you blend it. Counter this problem by freezing coconut water in trays prior to making your drink. Pineapple is the star in this smoothie, both for taste and its high potassium content, which helps lower blood pressure.

Recipe Yields: 3–4 cups

2 cups spinach

2 cups frozen pineapple chunks

2 teaspoons rum extract (or the real deal if you are on a cheat day!)

2 cups coconut milk

8 coconut water ice cubes

  1. Combine all ingredients and blend on high until smooth.
  2. Add more liquid if necessary.
