Strawberry Meringue Smoothie

Save your extra yolks from this recipe and add them to a simple egg scramble or frittata. To your egg dish, add mushrooms, onions, tomatoes, bacon . . . or whatever your taste buds crave. Serve it up with this heavenly smoothie for a powerhouse meal of nutrition, taste, and happy friends and family.

Recipe Yields: 3–4 cups

2 cups mixed greens

3 pastured egg whites

3 cups frozen strawberries, stems removed

1–2 teaspoons raw honey (depending on the sweetness of the strawberries)

2 cups unsweetened almond milk

  1. Blend egg whites on high speed until frothy.
  2. Add remaining ingredients and blend on high until smooth.
  3. Add more liquid if necessary.
