Peachy Lychee Smoothie

Lychees can be found in Asian markets but are also starting to show up in mainstream grocery stores. Getting into a lychee is quite easy. Cut off the top end and then peel off the outer layer by pushing on the meat of the fruit. Then cut out the inner seed. Lychees can be enjoyed plain as a tropical snack, in salads, or in green smoothies.

Recipe Yields: 3–4 cups

2 cups mixed greens

6 mint leaves

1 cup frozen peach chunks

1 cup lychees (10–12), peeled and pitted

12 lime, peeled and seeded

1 tablespoon sunflower seeds

2 cups green tea, cooled

  1. Combine all ingredients and blend on high until smooth.
  2. Add more liquid if necessary.
