SIMPLE STEAMED BROCCOLI WITH LEMON AND OLIVE OIL

Serves 4

Olive oil, salt, and lemon: If there are three ingredients that can transform a vegetable, these are the ones. In fact, if a savory dish is lacking, this trio can brighten and intensify the flavors instantly. Use the best-quality olive oil you can get your hands on and use the combo with abandon.

Juice of 1 lemon, plus some wedges for serving

ΒΌ cup extra virgin olive oil

6 cups broccoli florets, blanched and shocked (see here)

Kosher salt

Fresh ground black pepper

Squeeze the lemon juice into a medium bowl, then add the olive oil. Warm the broccoli in the microwave. Transfer to the bowl and toss to coat. Season with salt and pepper, transfer to a platter, and serve with the lemon wedges.
