Serves 4 to 6
Think of the fruit here as suggestions—use any mix you like.
2 ruby red grapefruits, segmented with their juices
4 Cara Cara or other navel oranges, segmented with their juices
2 key limes, segmented with their juices
2 teaspoons extra virgin olive oil
Juice of 1 lemon
Kosher salt
Fresh ground black pepper
1 tablespoon crumbled feta cheese
8 mint leaves, rough chop
Combine the grapefruit, orange, and lime segments with their juices in a bowl. Dress with the olive oil and lemon juice. Season with salt and pepper and toss. Sprinkle the feta and mint over and refrigerate for 10 minutes. Serve cold.
