Soy Curls are a shelf-stable meat substitute containing a single ingredient—whole soybeans—that are available at natural food stores or online. If you prefer, you can substitute 8 ounces of steamed, diced tempeh or 1½ cups of cooked or canned dark red kidney beans.
This Creole-inspired dish is best served on a bed of cooked greens or whole grains.
1 cup Soy Curls
1¼ cups Vegetable Broth or water
1 tablespoon salt-free Creole seasoning blend
2 tablespoons jarred tomato paste
2 teaspoons white miso paste
1 large red onion, chopped
1 large green bell pepper, seeded and chopped
2 celery ribs, chopped
3 garlic cloves, chopped
1 14.5-ounce BPA-free can or Tetra Pak salt-free diced tomatoes, drained
2 bay leaves
1 teaspoon dried thyme
½ teaspoon dried basil
Ground black pepper
Place the Soy Curls in a large saucepan with the broth and Creole seasoning. Bring to a boil. Cover and simmer for 5 minutes. Stir in the tomato paste, miso, onion, bell pepper, celery, and garlic. Cover and cook until the vegetables are softened, about 10 minutes. Stir in the tomatoes, bay leaves, thyme, basil, Savory Spice Blend, and black pepper to taste and cook, uncovered, for about 15 minutes to blend the flavors and reduce the liquid. Remove the bay leaves before serving with Healthy Hot Sauce.
