Enjoy this delightful dish in place of mashed white potatoes or as a topping for the Lentil Shepherd’s Pie.
1 head cauliflower, trimmed and cut into 1-inch pieces
1 tablespoon nutritional yeast
1 teaspoon white miso paste
2 teaspoons Roasted Garlic (optional)
Steam the cauliflower until soft, about 10 minutes. Transfer to a bowl or a food processor. Add the nutritional yeast, miso, and Roasted Garlic (if using) and mash or purée until smooth. Serve hot.
