WAFFLE CHEESE SANDWICHES

This makes a good party appetizer or snack. The sandwiches can be toasted on the buffet table with your guests in attendance or prepared ahead, refrigerated, and then crisped in a 350°F oven just before serving.

¼ pound American cheese, finely grated

1 tablespoon finely chopped drained pimiento

1 teaspoon mayonnaise

8 thin slices firm white bread

1 tablespoon margarine or butter, softened

Mix cheese, pimiento, and mayonnaise together with a fork until combined.

Trim crusts from bread. Spread 4 slices with cheese mixture and top with remaining bread slices to make 4 sandwiches. Spread outsides of sandwiches with margarine.

Preheat waffle iron. Toast each sandwich until golden. Cut toasted sandwiches into quarters and serve immediately or keep whole sandwiches warm until all have been toasted, quarter and serve. If desired, make and toast several hours ahead, refrigerate, covered. Warm 10 minutes in a 350°F oven before serving.
