Acknowledgements

What started as a simple keepsake has been transformed into a beautiful regional book containing a fine assortment of recipes. Representing all of the regions of Italy, our members, families and friends have provided us with an everlasting time capsule of over two hundred recipes for your enjoyment.

So many volunteers were involved in the production of this cookbook that it is difficult to know where to start. Giuliano Lunardi, Chairman of our Arts and Culture/Events Committee, was first approached about the idea. His support was overwhelming, then and now. With his assistance, the cookbook was presented and approved by the Giovanni Caboto Club Executive, Council and its Members.

Collecting, editing and translating these recipes was not an easy task, but was nevertheless accomplished by our group of dedicated volunteers. There are too many to list here, so we have dedicated the following page to listing all of them.

Collecting over 200 recipes is one thing, but it was our intention from the beginning to make, plate and taste each one. This became possible when our General Manager Ron Moro and Executive Chef Steven Ward and his team of cooks volunteered their services. The kitchen staff were incredible, preparing each recipe as they continued day-to-day operations servicing our members and their clients.

As the saying goes, a picture is worth a thousand words. We were fortunate to have an incredible photographer, Mauro Cechi, who photographed each recipe. Looking at his photographs alone would make one hungry.

Last but not least, we want to thank our members, families and the friends of our club who opened up their hearts and homes by supplying these recipes for all to enjoy.

I challenge all of you to try and test all of the recipes in this book. Most of all, I hope you enjoy them with family and friends!
