(Pasta and Peas)

This type of dish is a lifesaver because it is quick and easy to make, especially when you do not feel like cooking. Although easy to make, it is very satisfying.

(Yield: 4 servings)

8 cups water

14 ounces peas (fresh or canned)

1 tablespoon extra-virgin olive oil

1 teaspoon salt

ΒΌ cup parsley chopped

1 onion (diced)

1 pound tubetti (or favourite short pasta)

Parmesan cheese

1. In large saucepan over medium heat, add all ingredients except for tubetti and cheese, and allow to boil for 2 minutes.

2.Reduce heat to low and continue cooking for 45 minutes.

3.When you are ready to add tubetti, increase to medium heat. Once mixture has returned to boil add tubetti (or your favourite short pasta) and cook until al dente.

Serve immediately with a sprinkle of cheese.
