Frittata di Spaghetti

(Spaghetti Frittata)

As explained on page 239, frittatas are very versatile when it comes to adding things to them. Here is the perfect solution for that leftover pasta. It is delicious and easy to make.

(Yield: 4 servings)

2 tablespoons extra-virgin olive oil

4 eggs

¼ cup Parmesan cheese

½ teaspoon salt and freshly ground pepper

leftover pasta (¼ pound pre-cooked)

1. Whisk eggs in bowl, add cheese, pasta and season with salt and pepper.

2.Warm oil in skillet over low heat, spread pasta mixture evenly in skillet and cook until bottom is set.

3.Place skillet in oven preheated to 350°F and bake until top is golden brown.

Serve hot or cold.
