Fagiolini al Pomodoro

(Long Flat Beans in Tomato Sauce)

Pina (Ventura) Olivito, San Giovanni in Fiore, Cosenza

(Yield: 4 servings)

3 tablespoons extra-virgin olive oil

1 pound flat green beans (trimmed)

2 large tomatoes (peeled and diced)

½ onion (diced)

1 garlic clove (minced)

1 cup water (white wine)

salt and freshly ground pepper

¼ cup parsley (finely chopped)

7 basil leaves (finely chopped)

1. Warm oil in large skillet over medium heat.

2.Add beans, tomatoes, onions, garlic, water (wine), salt and pepper. Cook covered for approx. 20 minutes. If dry, add more water (wine).

3.Remove from heat. Add parsley and basil. Toss until mixed.

Re-season and serve hot as a side dish.

A sprinkle of chili flakes adds great flavour to this dish.
