Mirror Glaze

3 cups | Prep Time: 15 Minutes | Start to Finish: 1 Hour 45 Minutes

  • cups white vanilla baking chips, chopped
  • 2 envelopes unflavored gelatin
  • cup cold water
  • 1 cup sugar
  • cup light corn syrup
  • ½ cup (from 14-oz can) sweetened condensed milk (not evaporated)
  • 1 to 2 drops gel food color

1 Place baking chips in medium bowl. Set aside. In small bowl, sprinkle gelatin on ⅓ cup of the water to soften.

2 In 2-quart saucepan, cook remaining ⅓ cup water, sugar and corn syrup over medium heat 5 to 6 minutes or until sugar is dissolved. Remove from heat. Stir in gelatin until dissolved. Stir in sweetened condensed milk until well blended. Pour hot sugar-gelatin mixture over baking chips; let stand 5 minutes. Stir until smooth. Cool to 30 minutes or until mixture is between 85°F to 90°F. Carefully stir in food color until well blended and desired color.

3 Starting at center of cold cake, slowly pour glaze evenly over cake allowing to run down sides to cover. Refrigerate 30 minutes to set. Transfer to serving platter.
