Lemon and lime mint iced tea

Makes 1 litre

4 teaspoons black or green tea (or 4 teabags)

4 sprigs fresh mint

1 tablespoon rice malt syrup

juice of 2 limes

juice of 2 lemons

Pour 1 litre of boiling water into a large heatproof jug or bowl and add tea and mint sprigs. Leave for 10 minutes to infuse.

Strain the tea into a bowl (or simply take out the teabags and mint).

Add in the rice malt syrup, lime and lemon juice and stir well.

Pour into a large jug with fresh mint sprigs and add lots of ice if you are drinking immediately, or store in fridge to cool until required.
