Mocha smoothie bowl

Serves 1

1 frozen banana

small handful baby spinach leaves

1 shot of coffee

¼ avocado

2 tablespoons raw cacao powder

1 tablespoon coconut milk

1 tablespoon plant protein (e.g. hemp, pea or rice)

2 medjool dates, pips removed

¼ cup buckinis (activated buckwheat), to serve

½ tablespoon cacao nibs, to serve

Blend the banana, baby spinach leaves, coffee, avocado, cacao powder, coconut milk, plant protein and dates in a high-speed blender until thick and creamy. Add a splash more of coconut milk if you need a little more liquid.

Pour the thick smoothie into a bowl and top with the buckinis and cacao nibs.
