¼ cup ground flaxseeds
½ cup sunflower seeds
½ cup sesame seeds
½ cup chia seeds
½ cup pepitas (pumpkin seeds)
1¼ cups water
2 teaspoons sea salt
2 tablespoons nutritional yeast for cheesy crackers (optional)
Preheat oven to 155˚C fan-forced.
Combine all ingredients in a bowl and leave to set for around 10–15 minutes, to allow the chia and flaxseed meal to soak up the liquid and create a gel.
Line a baking tray with baking paper. Spread mixture out into three evenly sized rectangles about 0.5 cm thick. Lightly score the mixture with a knife to create cracker-size indentations for breaking or cutting later.
Place in the oven to bake. After 30 minutes, take out the tray briefly from the oven and use a spatula to flip the mixture onto the other side to ensure crisp baking. Continue to bake for another 30 minutes, until golden brown around the edges. Leave to cool on the baking tray in a switched-off oven, then break or cut into crackers.
