Serves 1
2 heaped tablespoons chia seeds
½ cup coconut milk
2 tablespoons blueberries
½ teaspoon vanilla extract
1 teaspoon maple syrup
2 teaspoons desiccated coconut
1 teaspoon shredded coconut, to serve
1 heaped teaspoon almond butter, to serve
Place the chia seeds in a bowl or a small container. Add the coconut milk, blueberries, vanilla extract, maple syrup and desiccated coconut. Stir well and leave to soak for 10 minutes, or cover and place in the fridge until ready to eat. If you like your pudding a little runnier, add a little more coconut milk.
Top with shredded coconut and almond butter to serve.
