Raspberry chocolate mousse

Makes 2 small serves

1 ripe avocado

2 tablespoons raw cacao powder

½–1 tablespoon rice malt syrup, to taste

pinch of salt (optional)

1 small handful of raspberries, to serve

Blend the avocado flesh, raw cacao powder, rice malt syrup and salt, if using, in a blender until smooth and creamy.

Serve in a bowl topped with fresh raspberries.
