MIXED BERRIES WITH MASCARPONE MOUSSE

When I was a little girl I used to take my bicycle and go all around the countryside looking for different kinds of berries. I guess this is where my passion for them started.

To make the mousse, whisk the egg yolk and sugar together until pale and creamy, then add the double cream and whisk together until you have soft peaks. Fold in the mascarpone and whisky, then refrigerate to set slightly.

Drizzle the orange olive oil over the berries and mix together very gently.

Spoon the mousse on to plates, then add the berries. Finish with the basil leaves.
