MY HOMEMADE MUESLI WITH LOTS OF NUTS AND SEEDS

This is for super-active people looking for a great way to kick-start the day. The grains, nuts and seeds will fill you up and there is no added sugar — just the sweetness from the dried fruit. Feel free to mix and match your favourite ingredients, or tailor a batch for a friend — muesli makes a great gift.

natural yoghurt, fresh berries, baby mint leaves and 2 tablespoons flaxseed oil, to serve

MUESLI

350 g (12 oz/3½ cups) rolled (porridge) oats

55 g (2 oz/¾ cup) bran cereal

90 g (3¼ oz/¾ cup) rolled quinoa

70 g (2½ oz/½ cup) walnut pieces, chopped

80 g (2¾ oz/½ cup) raw almonds, chopped

60 g (2¼ oz/½ cup) finely chopped brazil nuts

75 g (2½ oz/½ cup) sunflower seeds

55 g (2 oz/1/3 cup) LSA mix (see note)

75 g (2½ oz/½ cup) pepitas (pumpkin seeds)

50 g (1¾ oz/¼ cup) chia seeds (see note)

12 g (¼ oz/1/3 cup) puffed amaranth (see note)

40 g (1½ oz/1/3 cup) goji berries (see note)

120 g (4¼ oz/2/3 cup) sultanas (golden raisins)

60 g (2¼ oz/1/3 cup) dried apricots, chopped

70 g (2½ oz/½ cup) dried mango, chopped

45 g (1½ oz/½ cup) chopped dried apples

Place all the ingredients for your muesli in a large stainless steel bowl and combine well. That’s it — you’re done.

To serve, place a big dollop of yoghurt in a bowl, top with some of your homemade muesli, some fresh berries, a few sprigs of baby mint and drizzle of flaxseed oil if you wish.

Store your muesli in an airtight container in the fridge to keep it at its best.

NOTES

   LSA mix is a combination of ground linseed, sunflower seed and almond. It’s a good source of protein, fatty acids and fibre, and can be found in most supermarkets and health food shops.

   Chia seeds are a very good plant-based source of omega-3 and are also a source of protein, fibre and amino acids. When you put a spoonful in a little water it turns to jelly — very cool stuff. Chia seeds are slowly appearing in larger supermarkets but are more commonly found in health food shops.

   Amaranth is an ancient Aztec grain. It’s high in protein and has a delicious nutty flavour. Puffed amaranth can be purchased from health food shops.

   Goji berries (also known as wolfberries) can be found in Asian grocers and health food shops.
