Stuffed pasta is a dumpling, really, and ravioli and tortellini differ from many Asian dumplings (see page 356) only in the nature and flavor of the stuffings. Out of the nearly endless types, I’m focusing on ravioli (squares), tortellini (folded loops), and cannelloni (large open-ended tubes).
