Chirashi Sushi
Think of chirashi sushi as unstructured sushi (chirashi means “scattered”), sushi for when you have a craving but don’t feel like making individual rolls. These bowls make perfect one-person meals, they’re ideal for using up leftovers, and they also make great party food. All you have to do is set up a colorful buffet of several toppings, condiments, and sauces and let guests have at it.
There is no real recipe for chirashi sushi other than starting with Sushi Rice. Top the rice with anything from Kimchi (page 93) to Sea Slaw (page 55). You can’t go wrong. Combine any of the items from the chart on page 385, but here are a few classic combos:
