This finger-licking-good sauce is quintessentially Korean, with its soy, sesame, sugar, and garlic. It just might be the perfect marinade for grilled tofu, and is also wonderful for saucing Sushi Bowls (page 384) and as a dip for crudités.
Stir all the ingredients together in a small bowl until the sugar is dissolved. Serve or cover and refrigerate for up to 2 days.
Tahini Soy Sauce Thicker and richer: Substitute ¼ cup mirin (or 2 tablespoons honey mixed with 2 tablespoons water) for the sake and tahini for the toasted sesame seeds. Omit the ginger and scallions. Add a pinch of red chile flakes if you like. O
