Salsas

The building blocks for America’s favorite condiment (ketchup is now second) are simple and flavorful. Of course tomatoes are a staple, but so are fruits, green tomatoes, and tomatillos. All can be combined with herbs, and onions and garlic, oil, citrus, and chiles — mild or hot — usually play a role as well. The final product may be left chunky and loose or puréed.
