What do you do when you have a couple of cups of leftover edamame? You make the most beautiful green burger ever!
This burger is a great way to get your veggie haters to eat their greens. There’s spinach hidden in every patty, and it’s flavored with warm and earthy cumin and turmeric. There’s also a little paprika and oregano to round out the flavor profile, as well as a slight bit of heat from the cayenne pepper. Try it—you’ll love it! —LM + AM
SERVES 4
1 cup (213 g) uncooked jasmine rice
2 tbsp (14 g) ground flaxseed
6 tbsp (90 ml) water
2 cups (300 g) edamame
2 cups (60 g) chopped spinach
1 clove garlic, minced
1 tsp ground cumin
1 tsp smoked paprika
1 tsp ground turmeric
½ tsp dried oregano
¼ tsp cayenne pepper (optional, add only if you like spicy food)
Fine sea salt and ground black pepper, to taste
1 tsp avocado oil (optional)
4 hamburger buns (or gluten-free buns)

Lettuce
Tomato slices
Spinach
Sriracha
Soy sauce (or use liquid aminos for gluten-free)
Cook the rice according to the instructions on the package. Set aside.
In a small bowl, mix the flaxseed and water and stir until the mixture becomes thick and sticky. Let sit for 10 minutes. This is an egg substitute known as a “flax egg.”
Bring a medium pot of water to a boil and add the edamame. Boil for 5 minutes, drain the water and rinse with cold water. When the edamame is cool enough to touch, remove the beans from the pods and place them in a bowl.
Add the edamame beans to a food processor and process until it looks like tiny pebbles. Add the spinach, rice, flax egg, garlic, cumin, paprika, turmeric, oregano, cayenne (if using), sea salt and pepper to a food processor, and process until the mixture starts to form a ball.
Divide into 4 portions and roll each piece into a ball to form into patties.
Heat a large skillet over medium heat and drizzle with the avocado oil (optional if you have a nonstick pan). When the oil is hot, add the edamame burgers and cook for 8 minutes, or until firm and browned. Flip and cook the other side for 8 minutes. You can also bake in a 375°F (190°C) oven for 15 to 20 minutes, or until they begin to brown on top.
Serve on a bun with lettuce and tomato and your favorite condiments. Or serve the patty on a bed of spinach with a drizzle of sriracha, or serve as a patty and dip in soy sauce.
