Kalamata HUMMUS

This is a fancied-up version of hummus. Kalamata olives whip into a silky smooth hummus while complementing the earthiness of tahini and chickpeas—a charming take on an already fantastic spread. —MR

SERVES 4 TO 6

¾ cup (135 g) Kalamata olives

1 (14-oz [397-g]) can chickpeas, rinsed and drained

Juice of 1 lemon

1 tbsp (18 g) tahini

¼ cup (60 ml) water

1 tbsp (15 ml) olive oil

½ tsp ground cumin

1 clove garlic

½ tsp salt

Simply place all the ingredients in a blender or food processor and mix until creamy. Taste to see if you would like to add more salt or water to make it a thinner, creamier hummus.
