Homemade “CHEESY” POPCORN

Nutritional yeast may not be the prettiest sounding condiment, but definitely one to have on hand for when a taste of cheesiness is needed. It is not a yeast but a flaky golden seasoning that is a fantastic substitute for dairy cheese. Sprinkle generously on just about anything, especially fresh popcorn. Enjoy a movie night in with a new ritual: homemade “cheesy” popcorn. —MR

SERVES 3 TO 5

4 tbsp (55 g) coconut oil, divided

½ cup (105 g) organic popcorn kernels

⅓ cup (27 g) nutritional yeast

Sea salt, to taste

In a large and deep cooking pot, melt 1 tablespoon (14 g) of the coconut oil over medium-high heat. Then add 2 kernels and place a lid on top of the pot. Wait for the kernels to pop. Once they pop, add the rest of the kernels and shake the pot so that the oil coats all of the kernels.

Now, in a separate saucepan over medium heat, melt the remaining 3 tablespoons (45 ml) oil. Then add the nutritional yeast and mix well.

Once all the kernels have popped, pour the nutritional yeast seasoning over the popcorn and mix well. Sprinkle with sea salt to taste.
