MAKES 12 TO 14 BALLS
1 cup (110 g) raw unsalted cashews
17 Medjool dates, pitted
1 tsp ground cinnamom
1½ tbsp (11 g) ground ginger or ½” to 1” (1.3- to 2.5-cm) piece fresh ginger, grated
Zest of 1 large orange
Pinch of sea salt
Place all of the ingredients into a food processor. Blend it up until the nuts and dates have broken down and formed a big sticky ball, about 1 minute. Roll the mixture into 1-inch (2.5-cm) balls and store in the fridge for up to a few weeks!
