Chilled GINGER BERRY WATERMELON SOUP WITH MINT

This “soup” is ridiculously fresh, hydrating and juicy—it’s magic in the summer. If calling it a soup makes it sound less appealing, just think of it as a smoothie or juice in a bowl. —EvE

SERVES 2

3 cups (460 g) chilled chopped watermelon (keep a few cubes for garnishing)

1 cup (255 g) frozen strawberries

¾ cup (195 g) frozen cherries

1 tbsp (8 g) grated fresh ginger

1 tsp baobab powder

1 tsp acerola cherry powder (optional)

¼ cup (60 ml) coconut milk

2 tbsp (5 g) mint

Blend all ingredients together until smooth. Garnish with watermelon cubes, frozen fruit and mint if you like. YAY.
