There is nothing quite like the taste of a summer peach—so sweet and ripe, dripping with juice from every bite. Now take that same peach, slice it into a kale salad and wrap it in a maple-tahini dressing for a mouthwatering meal that sings the flavor of summer with every sumptuous bite. —MR
SERVES 1
DRESSING
3 tbsp (45 ml) olive oil
½ tbsp (7 ml) maple syrup
2 tbsp (30 ml) apple cider vinegar or lemon juice
1 tbsp (18 g) tahini
SALAD
3 large handfuls kale
⅓ apple, cubed
1 peach, cubed
½ avocado, cubed
1 green onion, thinly sliced
Few sprinkles of hemp seeds
Few sprinkles of pumpkin seeds
Few sprinkles of currants
Drizzle of olive oil
FOR THE DRESSING
Prepare the dressing by whisking all ingredients in a small bowl. Set it aside.
FOR THE SALAD
Start by tearing the kale into bite-size pieces, disregarding the stems. Wash the kale and pat it dry. Before you massage the kale, you want to pour the tahini dressing on top of the leaves. Then use your hands to massage the dressing into the kale. The acid from the dressing will help break down the leaves. Massage for 2 to 3 minutes. The longer you massage, the softer the kale will become.
Now add all of the remaining salad ingredients to the kale salad and mix well. Serve on plates with an extra drizzle of olive oil, and enjoy!
